Bistro Orgánico: A Culinary Jewel in San Pancho

When talking about Bistro Orgánico it is inevitable to think of an excellent combination of fresh, healthy and exquisite dishes and, as the name of this restaurant suggests, prepared with organic, locally produced ingredients.

Located within the facilities of the Hotel Cielo Rojo in San Pancho, Nayarit, Bistro Orgánico is a boutique restaurant with a menu inspired by offering plants and seafood to celebrate the flavors of the region.

Originally from this micro-destination in the Riviera Nayarit, Leticia Velázquez is the chef in charge of operating Bistro Orgánico. With 14 years of experience, she presented us with an exquisite brunch that began with some Organic Huevos Rancheros, which have a bed of black beans (stewed with coconut oil, garlic and a little spice), a fried egg is added on top of a wheat arepa and it is served with a roasted tomato sauce, avocado, goat cheese and sprouts.

To accompany, she offered a Buddha Bowl. It is a salad prepared with lettuce, spinach and fresh herbs (coriander, basil and parsley). These ingredients are mixed with a lemon vinaigrette with olive oil and sautéed black beans with quinoa and yellow curry. Avocado, organic fried egg, goat cheese, homemade cabbages and roasted tomato sauce are added.

A gluten-free Chocolate Brownie was served to close with a flourish. Baked only with butter, chocolate and walnuts, it is served with seasonal homemade jam (in this case prepared with mango, ginger and turmeric), a scoop of vanilla ice cream and decorated with flower buds.

From October 2020 to May 2021, Bistro Orgánico will feature Matt Millea as guest chef. Originally from Pittsburg, Pennsylvania, for the last 20 years he has based in Big Sur, California, where he collaborates with Outstanding in the Field, a company dedicated to bringing dinners to different places in the United States and beyond, where the impressive locations and fresh, locally produced ingredients starring these exclusive open-air events.
