This restaurant was inaugurated on June 21st, 2024, and although it is young in Puerto Vallarta’s culinary scene, it has already become a favorite among the foodie community thanks to its cuisine, which uses ingredients imported from Europe to ensure high quality in the preparation of each dish.

A GASTRONOMIC EXPERIENCE
During a recent visit by the Vallarta Lifestyles editorial team, the attentive and friendly staff at Mesón Ibérico presented some of their most outstanding and distinctive specialties.
Pulpo a la Gallega
“The idea behind this dish is to show how octopus is really eaten in Galicia,” says Iván Monroy, executive chef of Mesón Ibérico. For this tapa, the octopus is carefully cut with scissors and seasoned with a bit of extra virgin olive oil and coarse salt. It is served on a wooden board along with a series of toothpicks, allowing all diners around the table to taste it. It is accompanied by a loaf of bread to soak up the oil.
Spanish Potato Tortilla
“The potato tortilla is one of the most traditional and emblematic dishes in Spanish cuisine,” says the chef. “Basically, this tapa is prepared with slices of potatoes poached in extra virgin olive oil and high-quality organic eggs.”
Mesón Ibérico Paella
“In terms of flavor, the Mesón Ibérico Paella is the highlight of our restaurant because it mixes sea and mountain—it includes seafood, chicken, and pork. In short, our paella brings together everything you want to taste in rice,” Monroy shares.
The main ingredient in Mesón Ibérico Paella is Calasparrra rice, which is a bomba rice with a Denomination of Origin. “This rice is of excellent quality, it is shorter and wider, but it is the right and appropriate to cook evenly oven the entire diameter of the paella. This ingredient stands out above all others, and together, the whole dish results in a great harmony of flavors.”
A SWEET ENDING
A culinary experience is never complete without a sweet ending. The Baked Cheesecake and Santiago Almond Cake are iconic desserts that reflect Spain’s rich pastry tradition. A true delight to end the evening.
Agua de Valencia
The bar of this restaurant offers a traditional drink: Agua de Valencia. This refreshing combination of gin, vodka, cava, and orange juice is the perfect complement to any meal. “It is served in a glass and garnished with a slice of orange. It is so named because it comes from the area where most of Spain’s oranges are harvested, the Valencian Community, where cava, a Spanish sparkling wine, is also produced,” explains Pedro Segade, manager of Mesón Ibérico.
