Litten Brød: A Danish Bakery in Puerto Vallarta

Founded by Brian Bielenberg and Jupy Monarrez, Litten Brød is a Danish artisan bakery that opened its doors in February 2020 in the Puerto Vallarta’s dynamic Romantic Zone. Motivated by the opportunity to meet it, the Vallarta Lifestyles editorial staff visited this establishment to discover its concept and main specialties.

“Litten Brød is born from a deep respect and love for the timeless traditions of baking authentic cakes, rustic sourdough breads and other classic Danish bakery products, which are very loved and remember the old Denmark,” explains Gerardo Solórzano, general manager of Litten Brød.

To facilitate their commitment of authenticity, taste and tradition, their entire bakery is baked daily by Danish chef Jakob Bo Pedersen and Mexican chef Edgar Ortega, who are in charge of making two types of rugbrød (rye bread) with sourdough: fuldkornsrug brød (rye bread 70% multigrain) y mørkt rug brød (rye bread 50%). The offer is complemented by breads such as trekorns brød (three seeds), hvedebrød (wheat bread), valnødde brød (pecan bread), solsikke brød (sunflower seeds), havre brød (oat bread) and hvidt brød (white bread), among many others.

These breads, together with the baguettes that are also baked daily, are used to prepared open sandwiches and/or paninis with ingredients such as salmon, boiled eggs, frikadeller (a similar recipe to meatballs), lunch meats and cured meats accompanied with salads and toppings.

Litten Brød’s sweet bakery is made up of slices of cake, where the Dream Cake (vanilla cake with grated coconut and brown sugar) stands out; as well as Mazarin (marzipan, mixed berries jelly inside and almond crumble on top) and pastries, such as Terbirkes (puff pastry with butter and sugar inside with poppy seeds or sesame seeds on top). To accompany these specialties, they offer a wide variety of hot and cold drinks, teas, smoothies and frappés.

In English, Litten Brød means “little bread” and the concept of this bakery is based on hygge, a Danish expression that evokes a quality of coziness and comfortable conviviality that offers a feeling of contentment or well-being. Capacity is for 60 people divided into the interior with air conditioned and the outdoor patio, where they will soon have a wine bar, extending this way their culinary and beverage offerings.
