The Stacked Roasted Beet is listed in the cold tapas section of the menu and consists of a beet roasted in the oven (but served cold), accompanied by goat cheese, a yellow bell pepper emulsion and raspberry vinaigrette. It is decorated with toasted pecans, a tangerine cream along with some segments, as well as a touch of pesto. To complement the acid accents of this dish, the chef recommends a citrus white wine to balance the explosion of flavors on the palate. And their classic Sangría is always an excellent option to whet the appetite or accompany the meal. For the more knowledgeable, the restaurant’s wine cellar offers more than 150 labels from different parts of the world.
