One of the most interesting aspects is the explanation of the technique known as “dry milling” (beneficio seco), which is fundamental for separating the coffee beans before their final transformation.
The route continues toward the Pueblo Mágico of Compostela, a town that preserves a deep coffee-growing tradition with more than 150 years of history. Introduced by French settlers, this heritage remains alive and is especially reflected in the well-known Coffee Street (Calle del Café), one of the route’s most emblematic spots.

In certain coffee shops around the city, experts share every stage of the process, from harvest to roasting, revealing the details that influence the character and personality of each cup.
