Thierry Blouet Trophy Winner Will Represent Mexico at International Contest

Thierry Blouet, Café des Artistes chef and owner, introduced the young chef Florencio Reyes at a press conference. He is the winner of the 2018 edition of the Thierry Blouet Trophy and will represent Mexico at an international contest aimed at young cooks and organized by the gourmet association Chaîne des Rôtisseurs. The competition will be held in Taipei, Taiwan, on September 7.

The 26-year-old chef, originally from the state of San Luis Potosí, will face 21 cooks from different countries. They will have to prepare a three-course menu for five people, using basic ingredients and other goods provided in a mystery basket (whose only component revealed is the rack of lamb).

In order to develop his skills and perform his best, Reyes has been training for the last few months under the guidance of his mentor, Thierry Blouet and Cafe des Artistes executive chef, Lara Castellón.

“Florencio is very dedicated and puts a lot of effort into his training. I think these are his most important strengths. Right now, we are doing three or four trials each week to get him used to the competition. He is someone who has studied a lot and has shown interest for previous editions of the culinary contest, doing research and preparing himself,” Castellón commented.

Thierry Blouet himself participated in the same culinary competition at the age of 21, when he was beginning his career as a chef at Hotel Camino Real. He won the third place then (the best position achieved by a cook representing Mexico). Currently, Blouet is the president of Chaîne des Rôtisseurs in our country and one of his main goals is to continue supporting young talents.

“It is our wish that Florencio can match or surpass my performance. He is the first cook working for Café des Artistes that will participate in this important event after me,” Blouet added.
